Gardenia Yellow (CAS:94238-00-3) is a natural water-soluble food colorant extracted from ripe fruits of Gardenia jasminoides Ellis. Its main coloring components are crocin and crocetin, water-soluble carotenoids identical to the active ingredients in saffron.
