Disodium succinate is an organic substance with the chemical formula C4H4Na2O4-nH2O (n=6 or 0), abbreviated as WSA, commonly known as dried shellac, and exists in two forms, crystalline disodium succinate and anhydrous disodium succinate.
The hexahydrate product is a crystalline particle and the anhydrous product is a crystalline powder, colourless to white, odourless, fresh tasting, with a taste threshold of 0.03%, stable in air and with water soluble properties. It is often used in combination with monosodium glutamate, generally in amounts of about 10% of monosodium glutamate.
