Tannase, also known as tanninase, is a tannin acyl hydrolase. Besides being found in tannin-rich plants, tannase is widely distributed in microorganisms.

For acids bearing two phenolic groups, tannase cleaves the ester linkage between catechol and gallic acid, releasing gallate anions from tannic acid, and exhibits strong hydrolytic activity toward tannins.

It can be applied to treat tannins and proteins in beer to achieve clear and transparent liquor. It also removes astringency from persimmons and other foods, produces instant tea, and prevents turbidity in fermented tea.

Tannase is a specific enzyme capable of solubilizing tea cream. It breaks the ester bonds between catechol and gallic acid to hydrolyze bitter ester-type catechins. The released gallate anions compete with theaflavins and thearubigins for caffeine, forming low-molecular-weight water-soluble short-chain compounds. This reduces turbidity of tea infusion, raises raw material extraction rate, increases the content of soluble substances, alleviates bitter and astringent tastes, and enhances tea aroma.
Tannase hydrolyzes polyphenols to deliver clarification effects.
Tannase hydrolyzes ester bonds and depside bonds in gallotannins to produce gallic acid and glucose, and reduces astringency in fruit juice.
