Acid protease is produced by fermentation, extraction and refining using high-quality screened Aspergillus niger strains. It efficiently hydrolyzes proteins into amino acids and polypeptides under low pH conditions (pH 2.5–4.0). As an aspartic protease with an aspartic acid active center, it is widely applied in food, nutritional supplements, animal feed, vinegar, alcohol and soy sauce brewing, as well as leather processing industries to boost the nutritional value and additional added value of finished products.
