Product Description

Product Description

transglutaminase

Glutamine transaminase (TG) is an enzyme that catalyzes acyl transfer reactions. It induces cross-linking reactions between and within protein molecules, increasing protein molecular weight and forming robust gels. This alters the elasticity, water-holding capacity, and binding properties of various protein products while enhancing nutritional value by introducing lysine. When used in meat processing, it improves the physical properties and binding strength of various foods, enables comprehensive utilization of ground meat, and enhances product value.

Product Specification

Transglutaminase complies with the specifications set by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) and the Food Chemicals Codex (FCC) of the United States. It meets the food-grade enzyme requirements of the corporate standard Q/NPB 15—2006, and customized special TG enzymes are available to meet clients’ specific demands.

Functions & Applications

  • Food used:
Improving texture: Used for bonding in processed meat products (such as ham, steak), enhancing the taste; increasing the elasticity of cheese in dairy products.
Extending shelf life: Through cross-linking, reducing water loss and delaying food spoilage.

Frequently Asked Questions

Q What is Glutamine transaminase (TG) and how does it function?
Glutamine transaminase (TG) is an enzyme that catalyzes acyl transfer reactions, inducing cross-linking within and between protein molecules. This process increases the protein's molecular weight, forms robust gels, and improves elasticity, water-holding capacity, and structural binding properties.
Q What industry and safety specifications does your Transglutaminase meet?
Our Transglutaminase complies with global food-grade enzyme specifications set by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) and the Food Chemicals Codex (FCC) of the United States, as well as the standard Q/NPB 15—2006.
Q How does Transglutaminase improve processed food products?
In meat processing (like ham and steak), it assists in bonding structured meat to enhance overall taste and texture. In dairy processing, it increases the elasticity of cheese. Additionally, it extends the shelf life of products by reducing moisture loss and slowing down spoilage.
Q What is the recommended storage temperature and shelf life for the enzyme?
It is recommended to store the enzyme in a cool, dry place away from light, at a temperature below 0°C. When stored properly under these conditions, the product has a stable shelf life of up to 2 years.
Q Do you offer customized enzyme formulations?
Yes, customized special TG enzymes are available to meet our clients' specific application requirements and formulation demands.
Q What packaging options are available for different order sizes?
We package small orders in 1kg units (double plastic bags inside with an aluminum foil bag, packed in an outer box). For larger bulk orders of 10kg, 25kg, or more, we ship using standard drums or cartons containing 2 layers of protective plastic bags inside.
