Deaminase is an amino hydrolase independently developed tailored to the process characteristics of enzymatic production of yeast extract with high (I+G) content. It can quantitatively remove the amino group on the purine base of adenylic acid to generate 5′-IMP and ammonia. It is generally used in combination with nuclease to increase the contents of 5′-IMP and 5′-GMP. As natural flavor enhancers, 5′-IMP and 5′-GMP exert a prominent synergistic umami-boosting effect when used together. Deaminase plays an extremely vital role in the industrial production of nucleotides as well as the manufacture of flavoring foods such as yeast extract.

Combined with nuclease to enzymolyze waste beer yeast and fermented yeast biomass, convert AMP into IMP and significantly raise the content of I+G flavor nucleotides. Used to produce high-umami yeast extract for chicken essence, compound seasonings, hot pot base, soy sauce, meat flavor paste to enhance rich natural umami.
