Lipase is refined through submerged fermentation using the strain Candida lipolytica A.S.2.1405. It exhibits strong fat-hydrolyzing capacity, acting on ester bonds of oils and fats to produce fatty acids, diglycerides, monoglycerides and glycerol. Featuring high reaction efficiency, mild reaction conditions and non-toxic side effects, lipase is widely used in animal gelatin, fur, leather, textile and detergent industries.
Remains stable below 40°C, while severe inactivation occurs above 50°C. Effective working temperature: 15–45°C, optimal temperature range: 38–40°C.
Effective working pH: 5.5–10.5, optimal pH range: 7.0–7.5.
One unit (u/g) is defined as the amount of solid enzyme powder that hydrolyzes fat to produce 1 μmol fatty acid per minute at 40°C and pH 7.5 per gram of enzyme powder.
