Catalase is an independently developed food-grade enzyme preparation fermented from Aspergillus niger. Its primary function is to efficiently decompose hydrogen peroxide, featuring safety and environmental friendliness.
It is widely applied to eliminate residual hydrogen peroxide generated after sterilization, bleaching and processing of foods, food ingredients and food additives. In addition, it can serve as a leavening agent for baked goods such as bread.
