Pullulanase is a type of starch debranching enzyme refined and extracted via submerged fermentation with high-quality strains of Bacillus licheniformis. It specifically hydrolyzes pullulan, a polymer formed by maltotriose units linked through α-1,6 glycosidic bonds. Therefore, it is widely applied in starch sugar, organic acid (salt), beer mashing, modified starch, food brewing and other industries.
Pullulanase specifically catalyzes the hydrolysis of α-1,6 glycosidic bonds in amylopectin polysaccharides, which separates the branched side chains from the main chains and generates linear amylose with varying chain lengths.
One unit (U/mL) of enzyme activity is defined as the amount of enzyme required to hydrolyze pullulan to produce 1 mg of reducing sugar (calculated as glucose) per minute under the conditions of 60℃ and pH 4.5.

Enzyme activity may decrease to varying degrees if stored for an excessively long time or under unfavorable conditions. If temperature or humidity is too high, an appropriate increase in dosage is recommended during application.
