Pullulanase is a type of starch debranching enzyme refined and extracted via submerged fermentation with high-quality strains of Bacillus licheniformis. It specifically hydrolyzes pullulan, a polymer formed by maltotriose units linked through α-1,6 glycosidic bonds. Therefore, it is widely applied in starch sugar, organic acid (salt), beer mashing, modified starch, food brewing and other industries.
