Microorganisms serve as the primary source for its production due to their rapid proliferation and abundant availability, with Aspergillus niger and Penicillium as the dominant production strains. The glucose oxidase we supply is a high-purity enzyme preparation fermented from the fungal strain Aspergillus niger.

Application Conditions

Add this product to flour at a dosage of 5–10 ppm for flour products.

This enzyme is active at pH 3.5–6.5 and temperatures ranging from 20 °C to 70 °C. Its optimal working temperature is 30–40 °C, and optimal pH value is 3.5–6.5. No precipitate or turbidity will form after reaction.

Stored at 2–8 °C, the shelf life can exceed 12 months.
