Glucose Oxidase, also known as GOD or GOX, is widely found in animals, plants and microorganisms. Microorganisms serve as the primary source for its production due to their rapid proliferation and abundant availability, with Aspergillus niger and Penicillium as the dominant production strains. The glucose oxidase we supply is a high-purity enzyme preparation fermented from the fungal strain Aspergillus niger.
Add this product to flour at a dosage of 5–10 ppm for flour products.
This enzyme is active at pH 3.5–6.5 and temperatures ranging from 20 °C to 70 °C. Its optimal working temperature is 30–40 °C, and optimal pH value is 3.5–6.5. No precipitate or turbidity will form after reaction.
Stored at 2–8 °C, the shelf life can exceed 12 months.

Enzyme activity may decrease to varying degrees if stored for an excessively long time or under unfavorable conditions. If temperature or humidity is too high, an appropriate increase in dosage is recommended during application.
