Invertase, also named sucrase or beta-fructofuranosidase (CAS No. 9001-57-4, EC 3.2.1.26), is a food-grade enzyme preparation refined and extracted via submerged microbial fermentation.
This product can be used as a food additive and food ingredient, as well as a biocatalyst in food, beverage, alcoholic fermentation, wastewater treatment and other industries.

Enzyme activity may decrease to varying degrees if stored for an excessively long time or under unfavorable conditions. If temperature or humidity is too high, an appropriate increase in dosage is recommended during application.

The optimal working temperature for Invertase is between 45–55 ℃ (with an active range of 20–60 ℃). The optimal pH is 4.5–5.5 (within an active range of 3.0–8.0).
Invertase hydrolyzes sucrose into a 1:1 mixture of glucose and fructose. This helps prevent sucrose crystallization, improves sweetness, texture, and color. In baked goods, it maintains freshness, acts as a humectant, and reduces stickiness during shaping.
It should be stored in a cool, dry place away from light, ideally below 0°C. High temperature or humidity may reduce enzyme activity over time, so an increased dosage may be needed if stored in unfavorable conditions.
We offer 1kg packaging (double plastic bags inside an aluminum foil bag and box outside) and bulk packaging of 10kg, 25kg or more (shipped in drums or cartons with 2 layers of plastic bags inside).
Small shipments (1kg–25kg) are delivered door-to-door via EMS, DHL, UPS, or FedEx in 3-7 days. Larger orders over 25kg can be delivered via Air (3-7 days) or Sea (10-35 days) depending on the destination and preference.
